 Pickles Against Cancer Potato Salad

Ingredients

3 large russet potatoes

3 eggs

2-3 large pickles or pickle spears

1 bunch of dill

2 stalks of celery

1/2 c of red onion

1 cup of mayonnaise

1 Tbsp of mustard

1 Tsp of apple cider vinegar

1/2 Tsp of garlic powder

Directions

  1. Peel potatoes and cut into 1" cubes.  Place cubes in Instant Pot
  2. Place 3 eggs on top of potatoes 
  3. Cover potatoes and eggs with water.
  4. Close and seal instant pot and set to ZERO minutes.  It will take up to 23 minutes for the instant pot to come up to pressure.  Once it comes up to 1 minute, quick release the pressure.
  5. While potatoes and eggs are cooking, dice celery, red onion, pickles, and dill.

  6. Place diced potatoes on sheet pan, season with salt and allow to cool for 30 minutes.
  7. Place eggs in bowl with cold water and allow to cool.
  8. After potatoes cooled for 30 minutes, peel eggs and dice eggs into small dices.
  9. Place potatoes, celery, red onion, pickles, eggs into a large bowl.

  10. Add 1 cup mayonnaise, 1 Tbsp mustard, 1 tsp of apple cider, and 1/2 tsp of garlic powder.  Using a rubber spatula gently fold together.
  11. Add dill and stir one final time.  

  12. Cover and chill for at least 1 hour.
