Twice Baked Potatoes- On the grill
This is something I have made before and recently featured in my #spatchcock chicken meal.
Ingredients:
- 2 russet potatoes
- 1/4 cup sour cream
- 1/4 cup whole milk
- 2 slices bacon, grilled/fried and diced
- 1 bunch chives diced
- 1/2 cup shredded cheese
Salt and pepper to taste
Directions:
- Preheat grill to 375. Scrub both potatoes and puncture tops with a fork.
- Place on upper rack and cook for 1 1/2 to 2 hours.
- Remove from grill, slice 1/4 off top of potatoes and scope insides into a bowl. Leaving a small edge around the “bowl” portion of the potato
4. Combine potato scooping with sour cream, whole milk, diced bacon, diced chives and shredded cheese. Salt and pepper to taste. Stir to combine
5. Place heaping filling into potato boats
6. Place back on grill for 30 minutes or until tops are golden brown
