Sunday I picked up my half pig (already butchered into multiple cuts and products) from a farm that is local to the Dakotas and Minnesota. This is my second year purchasing from them and will have pork to last me through the winter and to help inspire future dishes. One of my favorite dishes to make with this pork is stuffed pork chops smothered in a cream of mushroom sauce.
