Shrimp Salad with Honey-Lime Vinaigrette

Shrimp Salad with Honey-Lime Vinaigrette This an interesting take on a shrimp salad. I used a more of a Southwestern type of inspiration for a romaine lettuce salad but added grilled shrimp. This was featured with my #baconwrappedfiletmignonwithlobstercreamsauce. Ingredients (salad): - 2 heads of romaine lettuce - 1 pint of cherry tomatoes - 1-2 avocados - 1 can of black beans - 2 ears of sweet corn or 1 can - 1/2 red onion Ingredients (Honey-Lime Vinaigrette) - 2 tablespoons extra-virgin olive oil - 1 1/2 tablespoons fresh lime juice - 2 teaspoons honey - 1/4 teaspoon kosher salt - 1/8 teaspoon ground red pepper Directions: 1) Roughly dice the romaine lettuce and place in colander and rinse. Keep it local

Sunday I picked up my half pig (already butchered into multiple cuts and products) from a farm that is local to the Dakotas and Minnesota. This is my second year purchasing from them and will have pork to last me through the winter and to help inspire future dishes. One of my favorite dishes to make with this pork is stuffed pork chops smothered in a cream of mushroom sauce. I strongly suggest you look for local farms and support their business but also enjoy the amazing foods they have to offer! You won't be disappointed. Day 2 in Arizona and it is AMAZING! We are heading out today to our favorite Vietnamese restaurant for Pho! Look for updates on the "Places I LOVE to eat at" later tonight as well as the first meal I will be making, spatchcock chicken with twice baked potatoes and garlic green beans.
